Zebulon, NC - Phyllis Hobbs Jackson, age 81, died Monday morning, May 19, 2025, at the SECU Hospice House in Smithfield, NC, from multiple health issues. She and her husband, Ted lived in Johnston County with their daughter, Debbie, and son-in-law, Kenny Moncol. Phyllis was married to her high school sweetheart, Ted, for 65 years. Phyllis and Ted lived in Raleigh until 2022, when they sold their home and moved in with their daughter. She was a homemaker until her children started school. She worked as an NC State Employee for 21 years, until her retirement in July 1994. Phyllis worked most of her career as a workshop coordinator at NC State University with the Industrial Engineering Continuing Education Extension Services. She completed her career working as an administrative assistant to the Section Chief of the Hazardous Waste Section of the Division of Waste Management. She was a dedicated employee who never saw a task that she would not perform, whether it was her job or not. She was loved by all her coworkers, and she was highly regarded by all who worked with her.
Phyllis enjoyed cooking, sewing, and camping trips with her family. She was a great seamstress who made clothes for herself, her children, and her grandchildren. She was a great cook and loved quilting and crafting. She enjoyed college football and attended many college football games, bowl games, and national championship football games with her husband, Ted, who was an ACC football official and a replay coordinator for the ACC after retiring as an official. She and Ted traveled all over the United States, attending college football games and bowl games such as the Rose Bowl, Sugar Bowl, and Cotton Bowl. Many of these were great family trips that she enjoyed sharing with her children and grandchildren.
As an active church member, she served as a deacon, Sunday School teacher, VBS teacher, GA teacher, youth leader, WMU leader, and choir member. Phyllis was a devoted Christian, wife, mom, grandmother, great-grandmother, and sister who loved her family. She repeatedly stated that her family was the most important thing to her and she cherished every minute with them. She loved watching her great-grandchildren play around her when they came over for family dinners. She enjoyed family gatherings during the holidays and always looked forward to them. She always put others before herself and found joy in doing for others. She was always kind to everyone she met, and she made everyone feel loved and valued.
Carolyn Phyllis Hobbs was born on October 14, 1943, in Smithfield, North Carolina, and was the eldest daughter of her parents, Leon and Henrie Leigh Hobbs. She attended Smithfield High School and graduated from Broughton High School after she and Ted moved to Raleigh, North Carolina. She is preceded in death by her parents, W. Leon Hobbs and Henrie Leigh Hobbs; father-in-law and mother-in-law, Edwin J Jackson Sr (Jack) and Ann Creech Jackson; brothers-in-law, Jan Robin Jackson, Bill Cochran, and Ron Curylo; and great-granddaughter, Anna Sophie Carolyn Stewart.
Phyllis is survived by her husband, Edwin A Jackson Jr (Ted); daughter, Debbie Jackson Moncol and husband Kenneth (Kenny) of Zebulon, NC; son, Edwin Dale Jackson and wife Lauren of Wendell, NC; grandchildren, Jamie Moncol Wall and husband David of Wendell, NC, Corey Phillip Moncol and wife Kayla of Zebulon, NC, Lindsey Carolyn Ann Stewart and husband Connor of Knightdale, NC, Jeffrey Dale Jackson of Matthews, NC, and Stacy Lynn Barrick of Bothell, Washington; great grandchildren, Braylee and Alison Moncol of Zebulon, NC, Mckenleigh and Holden Wall, of Wendell, NC, and Jackson Stewart, of Knightdale, NC; sisters, Patricia Cochran of Smithfield, NC, Teresa Johnson and husband Ron of Leland, NC, Beverly Erwin and husband Bill of Clayton, NC; sister in law, Ann Candace Jackson of Smithfield, NC and many nieces and nephews.
A celebration of life and memorial service will be held on May 28th, 2025, at 1:00 pm at White Oak Baptist Church, 13943 Buffalo Road, Archer Lodge, NC 27527. Family and friends are invited to gather and visit at the home of Kenny and Debbie Moncol, 4904 Thanksgiving Fire Road, Zebulon, NC 27597, immediately following the service.
